做法:春笋切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁时盖(gài )上锅(guō )盖焖。
