做法:洗净(jìng )宰好鲫鱼,洗净淮山和(hé )薏米。用清(qīng )水把(bǎ )陈皮泡软,拍(pāi )裂(liè )一(yī )小块(kuài )姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲(bāo )一个半小时(shí ),下盐(yán )调味即可品尝。
