做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分(fèn )钟左右。再加(jiā )入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入(rù )少量(liàng )清水半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
