做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦一(yī )遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的(de )鲫(jì )鱼和(hé )其(qí )他材料,武火(huǒ )煮沸,转中(zhōng )小火煲(bāo )一(yī )个(gè )半小时,下(xià )盐调味即可品尝(cháng )。
