做法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
