做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一遍,放两勺油,待(dài )油六成热下鱼(yú ),煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个半(bàn )小时(shí ),下盐调味即(jí )可(kě )品尝。
