做法:春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮到水快熬干的(de )时(shí )候加入(rù )盐,翻炒均匀(yún )稍收(shōu )汁时(shí )盖上(shàng )锅盖焖(mèn )。
