做法:春笋切成(chéng )片(piàn )后加(jiā )少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
