做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和薏米(mǐ )。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一(yī )遍,放两勺油,待油六成热下(xià )鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小(xiǎo )火煲(bāo )一个半小时(shí ),下盐调(diào )味即可(kě )品尝。
