做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅(guō )盖大火煮开(kāi )后转(zhuǎn )中火(huǒ )。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
