做法:洗(xǐ )净宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上(shàng )擦一遍,放两勺油(yóu ),待油六成(chéng )热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料(liào ),武(wǔ )火煮沸,转中小火煲一个半小(xiǎo )时,下盐调(diào )味即可(kě )品尝。
