做(zuò )法:洗(xǐ )净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅(guō ),用(yòng )姜块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲一个半小时,下盐调味即可品尝。 -
