做法:洗净宰好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和薏米。用(yòng )清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅(guō ),用姜(jiāng )块(kuài )在锅上(shàng )擦一遍,放两勺油,待(dài )油(yóu )六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的(de )清水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小火(huǒ )煲一个半小时,下盐调(diào )味即(jí )可品尝。
