做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生(shēng )姜切(qiē )片(piàn ),葱(cōng )切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
