做法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅(guō ),用姜块在锅(guō )上擦(cā )一遍,放两勺(sháo )油,待油(yóu )六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料(liào ),武火煮沸,转中小火煲一(yī )个半(bàn )小时,下盐调味即可品尝。
