做法:春(chūn )笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干(gàn )的时候加入(rù )盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖焖。
