做(zuò )法:春笋切成(chéng )片后加少许盐捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
