做法:春笋切成片后(hòu )加少许盐捞出后用清(qīng )水浸(jìn )泡(pào ),生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的(de )时候加入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收汁时盖上(shàng )锅盖焖。
