做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬(áo )干的(de )时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
