做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清(qīng )水(shuǐ )半(bàn )掩住(zhù )春笋(sǔn ),盖(gài )上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
