做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用(yòng )清水把陈皮泡软,拍裂(liè )一小块姜,热锅,用(yòng )姜块在锅(guō )上擦(cā )一(yī )遍,放两勺油(yóu ),待油六成(chéng )热(rè )下(xià )鱼(yú ),煎至微黄。煮沸瓦煲里的清水,放入煎煮好的(de )鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲一(yī )个半小时(shí ),下盐(yán )调味即可品尝。
