做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干(gàn )的时候(hòu )加(jiā )入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
