做法:洗(xǐ )净(jìng )宰好(hǎo )鲫鱼(yú ),洗净淮山和薏米(mǐ )。用清水把陈皮(pí )泡软,拍裂一小块姜,热锅,用(yòng )姜(jiāng )块在锅(guō )上擦(cā )一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小火煲一(yī )个半小时,下盐调味即可品(pǐn )尝。
