做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米(mǐ )。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺油,待(dài )油(yóu )六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和(hé )其他材料,武火煮(zhǔ )沸,转中小火煲一个半小时(shí ),下(xià )盐调味即可品尝(cháng )。
