做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮(pí )泡软,拍裂(liè )一小块(kuài )姜,热锅(guō ),用姜块在锅上(shàng )擦一遍(biàn ),放两勺油,待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转中小火煲一个半小时(shí ),下(xià )盐调味即可品尝。
