做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻(fān )炒1分钟左右。再加入(rù )生(shēng )抽(chōu )、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火(huǒ )煮开(kāi )后转中火。煮到(dào )水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
