做法(fǎ ):春笋切成片后加(jiā )少许盐捞出(chū )后用清水浸泡(pào ),生(shēng )姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖(gài )大火煮开(kāi )后转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
