做(zuò )法:洗净宰好(hǎo )鲫鱼,洗(xǐ )净淮山和(hé )薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油六成(chéng )热下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放(fàng )入煎煮好(hǎo )的鲫(jì )鱼和(hé )其他(tā )材料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品尝。
