做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把陈皮泡软,拍裂(liè )一小(xiǎo )块姜,热锅,用姜块(kuài )在锅上擦一遍,放两勺油,待油六成热下鱼,煎至(zhì )微(wēi )黄(huáng )。煮沸瓦煲里的(de )清水,放入(rù )煎煮好的鲫(jì )鱼和其(qí )他材(cái )料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小时(shí ),下盐(yán )调(diào )味即可品尝。
