做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春(chūn )笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍(shāo )收汁时(shí )盖(gài )上锅(guō )盖焖。
