做法:春(chūn )笋切(qiē )成片后(hòu )加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后(hòu )转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅(guō )盖焖。
