做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到水快(kuài )熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
