做法:春笋切成片后加(jiā )少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油(yóu ),放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火(huǒ )。煮(zhǔ )到(dào )水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。
