做法:洗净宰好鲫(jì )鱼,洗净淮山和(hé )薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热(rè )锅,用姜(jiāng )块在锅上擦一(yī )遍,放两勺油,待油六成(chéng )热(rè )下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫(jì )鱼(yú )和其他(tā )材料,武火煮沸,转(zhuǎn )中小火煲(bāo )一个半小时(shí ),下盐调味即可品尝。
