做法:洗(xǐ )净(jìng )宰(zǎi )好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用姜块在(zài )锅上擦一遍,放两(liǎng )勺油,待油六成(chéng )热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小火煲一(yī )个(gè )半小时,下(xià )盐(yán )调味即可品尝。
