做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖大(dà )火(huǒ )煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
