做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用(yòng )清水(shuǐ )把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦煲(bāo )里(lǐ )的(de )清水,放入煎(jiān )煮好的鲫鱼和其(qí )他材料(liào ),武(wǔ )火煮沸,转中小火煲一(yī )个半小(xiǎo )时,下盐(yán )调味即可品尝。
