做(zuò )法(fǎ ):洗净宰好鲫(jì )鱼(yú ),洗净淮山和薏米。用清水把陈(chén )皮(pí )泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转中小(xiǎo )火煲一个半小时(shí ),下盐调味即(jí )可(kě )品尝。
