做法:春笋切成片后加少许盐捞(lāo )出后(hòu )用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入(rù )生抽、老抽(chōu )、蚝(háo )油(yóu )翻炒均(jun1 )匀,加入少(shǎo )量(liàng )清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
