做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片(piàn ),葱(cōng )切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放(fàng )入生(shēng )姜、春(chūn )笋、牛(niú )肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上(shàng )锅盖(gài )焖。
