做(zuò )法:春笋切成片后加(jiā )少许(xǔ )盐(yán )捞(lāo )出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热(rè ),倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时(shí )盖上锅盖焖。
