做(zuò )法:洗净宰好鲫鱼,洗净淮山(shān )和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成热(rè )下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中(zhōng )小(xiǎo )火煲一(yī )个半小时,下盐调味即可品尝。
