做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅(guō )上擦(cā )一遍(biàn ),放两勺油,待(dài )油六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的(de )清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其他材料(liào ),武火煮沸,转中小(xiǎo )火煲一(yī )个半小时,下盐调味(wèi )即可品尝。
