做法:洗净宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水把(bǎ )陈皮泡软,拍裂(liè )一小(xiǎo )块(kuài )姜,热(rè )锅,用姜块在锅(guō )上擦(cā )一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和(hé )其他材(cái )料,武火煮沸,转中(zhōng )小火煲(bāo )一(yī )个半小时,下盐调味即可品尝。
