做法:春(chūn )笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸(jìn )泡(pào ),生姜切(qiē )片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
