做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入(rù )生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
