做法(fǎ ):洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山(shān )和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅上擦(cā )一(yī )遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小火煲一个(gè )半小时(shí ),下盐调味即可(kě )品尝。
