做法:春笋切成片后加少许盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮开后转中火(huǒ )。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
