做法:春(chūn )笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖(mèn )。
