做法:洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块(kuài )在锅(guō )上擦(cā )一遍,放两勺(sháo )油,待油(yóu )六(liù )成热下(xià )鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下(xià )盐调味即可品尝。
